Background/History: Wonderverse, Inc. d/b/a Wonderverse has made application to the Village of Oak Brook for a Class A-1 Liquor License for their restaurant, Wonderverse, 100 Oakbrook Center, Space 2300. The approval of these liquor licenses will increase the number of Class A-1 liquor licenses in the Village of Oak Brook from 39 to 40. All Village's liquor license ordinance requirements for a Class A-1 liquor licenses have been submitted at this time. CHECKING GUIDE - Inside Cover Insert Revised: 12.1.2021 M R-ProFun Name : Location : It Food & Beverage Alcohol Serving Procedure Objective: Outline Food & Beverage Alcohol Serving Proced re Eull Service Restaurant -A full service restaurant is where guests can be served their meal at the table, receives personal server attention, offered a broad menu and typically pay at the end of the meal. When alcohol is served,the restaurant is called an "on-premise" site,since the guest must drink inside the establishment. - Full-service restaurants- is a TIP accepting position. Tip procedures are specific to each area depending on the type of banking—server or cashier banking. - Employees must be 21 years and older to open and/or pour alcohol. At no time, shall an employee • under the age of 21 years open and/or pour alcohol. Employees between 18 and 21 years of age (sometimes referred to as minors in regard to serving alcohol) may serve alcoholic beverages in an area primarily designed and used for the sale and service of food for consumption on the premises as an incidental part of their overall duties.These minors cannot act as bartenders or cocktail servers.All alcohol must be kept locked unless an employee of 21 years or over is present. -Training: 1. Employees must have attended Food & Beverage Divisional Training. 2. Complete On The Job Training. 3. Must be TiPS(Training Intervention Procedures)trained within 40 days from their first day of work and be recertified every three years. -All guests that appear 50 years or younger must present approved forms of ID—(see ID CHECKING PROCEDURE). General Procedures: -All stored alcohol that is not set up for immediate sale must be kept in a secure area and locked up when not in usage Management must verify all sheets. -Warehouse deliveries of alcohol must be signed by a supervisor or manger upon delivery and must be put away in secured storage once received. All employees involved in the deliveries must be 21 years or older. • -Any employee is allowed to refuse service of alcohol with justifiable reason, including, but not limited to: No ID, Expired, altered, or fake ID's,observed guest passing alcohol to another guest without an approved wristband, signs of possible intoxication (see TiPS Training Handbook). -All back up alcohol must be kept in a secure area and locked up when not in use, - Employees are not allowed to purchase alcohol while on duty and cannot wear any part of their MR-ProFun I Food & Beverage Alcohol Serving Procedure— 12/1/2021 costume that identifies them as an employee of MR-ProFun. Employee discounts are not eligible on alcoholic purchases. -Any issues with alcohol must be reported to your supervisor or a manager immediately(e.g. intoxicated guests, handing off to a minor, unruly guest, missing alcohol). If you cannot reach management by phone, contact the nearest security or supervisor personnel to assist you.Call [TBDJ if there is an emergency or other security concern that needs immediate attention. Do not sell to intoxicated guests. Intoxicated guests may exhibit the following several behavioral cues: slur speech, glazed eyes, have trouble handing small items, appear forgetful, and may have issues with their balance. Do not let the guest get intoxicated. When in doubt,do not serve. Full Service Sales Procedure: 1. Take the guests order. Repeat their order to the guest to confirm it is correct. Ask the guest if they would like to order food. 2. Politely ask the guest for their ID to verify they are old enough to drink alcohol (See ID CHECKING PROCESS on page 9). If there is a problem with the I.D., call your manager. a. Must be a valid government issued driver's license, state ID, U.S. active military ID, alien registration card,or passport that contains an expiration date, birth date, and guest's picture. b. Check the expiration the date first. Expired cards are invalid. Do not accept receipts for a driver's license as they do not have a picture. c. Check the birthdate to ensure the guest is 21 years of age or older. d. Compare the guest to the picture. If in doubt, ask questions("May I verify your address, zip code, birthdate, etc.") If the guest does not appear to know the answers, ask for a second form of I.D. If you suspect they are underage,state that you need your supervisor's approval. Contact security and inform them you may have a potential underage guest trying to buy alcohol. e. All parties drinking alcohol must present their I.D.'s. If the guest does not have a valid ID and you are unable to determine the guest's legal age of 21 years or older, politely inform them of our procedure requiring a valid ID showing proof of age to serve alcohol. 3. Do not sell to a guest who is already intoxicated. Intoxicated guests may exhibit the following several behavioral cues: slur speech,glazed eyes, have trouble handing small items, appear forgetful, and may have issues with their balance(staggering). Never tell a guest that he/she is drunk. Simply state, "I am sorry but I cannot serve you. Would you like a soda or water instead?" Contact supervision if you need assistance. 4. Pick up their drinks as per your store procedures and deliver to the guests. S. Ensure you deliver the correct drink to the guest who ordered it. 6. Know where the drinks are going. Make sure that the guests do not pass off their alcohol to minor or a guest that you did not perform an ID check. Simply state, "I am sorry but I can no longer serve you. We do not want you to get sick. Would you like a soda or water instead?" Contact supervision and/or security if the guest appears intoxicated. 7. Guests cannot pour or consume alcohol brought in from the outside inside the restaurant. Contact your manager. 8. Guests are unable to carry their drinks outside of the restaurant perimeter. TIPS TO REMEMBER WORKING AT A FULL SERVICE LOCATION: Restaurant employees can spend more time with guests than a Quick Service location. Use your time to observe your guests behavioral cues and buy time between drinks. If you are tempted to give a guest a beer or wine to an intoxicated or underage guest,think again You can be held legally responsible if you serve someone who is under 21 years of age or is already intoxicated resulting court fines iail time and/or be a subiect of a personal lawsuit. You could be terminated and cost the Wonderverse its license to sell alcohol. A guest is obviously intoxicated when an average person can plainly observe that the guest is exhibiting behavioral cues.The usual behavioral cues are staggering, alcoholic breath, slurred speech, poor muscular coordination, etc. Do not tell the guests they are too drunk to serve.Tell them you can no longer serve them and/or we do not want them to get sick. Do not serve the guest. Contact management and/or security. You cannot sell alcohol before or after your shop's operating hours, unless otherwise directed • by your management.Alcohol cannot be sold between 2 a.m. and 6 a.m. in the State of California. Team leader/Supervisor Responsibility: Enforce all MR-ProFun policies & procedures regarding the sales and service of alcohol. Monitor the transportation, stocking, storage, selling and any handling of alcohol by the staff. Conduct regular spot checks with guests to ensure compliance with ID CHECKING PROCESS. Spend time with servers to ensure they are not over-serving and are following all procedures stated above. Ensure that all Department practices are being followed and adhered to according to procedure. - Keep all stored inventory locked at all times. Failure to check or properly check an ID that results in the service of alcohol to anyone under the age of 21 is grounds for termination. - The law allows the sale of alcohol between the hours of 6 a.m. and 2 a.m. It is unlawful to sell alcoholic beverages either by the drink or by the package, between the hours of 2 a.m. and 6 • a.m. of the same day. You cannot sell alcohol before or after your shop's operating hours, unless otherwise directed by your management. Alcohol cannot be sold between 2 a.m. and 6 a.m. in the State of California. It is illegal to serve,sale or otherwise provide alcohol to guests less than 21 years of age.
